The carrot pancakes...

...were fantastic. They do taste like pumpkin spice.


Carrot pancakes (and hummus and other varieties as well - my sister said that her MIL made the hummus ones as a dinner party appetizer; she made them smaller than silver-dollar sized for that). In this case, yay for Parade magazine!


The carrot pancakes were definitely worth all of that grating, though I'll still try to get a food processor and go to a near-puree for the next time. It would also better help if trying to hide the carrots - the texture is fine without, though. You also definitely do NOT want the salad-grate texture. You want as fine as you can get. I left out the curry powder, and my sister has done this with fresh ginger.

Suggestion? Consider carrot baby food. I use it in a carrot bread recipe I have. There's added water in it, usually, but it still saves a lot of trouble if you don't want grated carrot texture in whatever you're making.

Could consider that. Might need to adjust the milk in the recipe for the added water, but it's something - at least until I (hopefully) get that food processor.

Hummus is my favorite food....just hearing pancakes and hummus in the same sentence makes my mouth water.
